摘　　要：介绍并评述了单脂肪酸甘油酯的各种制备方法以及提纯方法。制备方法包括 :脂肪酸甘油直接酯化法、油脂甘油醇解法、脂肪酸甲酯甘油醇解法、环氧化物直接反应法 (以缩水甘油或环氧氯丙烷为原料 )、化学基团保护法 (用硼酸、酮、醛等保护羟基 )、脂肪酶催化合成法 ;提纯方法包括分子蒸馏法、溶剂结晶法、柱层析吸附分离法及超临界 CO2Several methods for preparing fatty acid monoglyceride and for purifying crude monoglyceride products were reviewed. The preparation methods include the direct esterification of fatty acids with glycerol, the alcoholysis of oil with glycerol or fatty acid methylester with glycerol, the direct reaction of glycidol and fatty acid or epichlorohydrin and sodium stearate, the protective method of —OH groups with boric acid, acetone or benzaldehyde, and the lipasecatalyzed synthesis. The purification methods include shortpath distillation, solvent crystallization, column chromatography and supercritical CO 2 extraction.
