摘　　要：熟熏兔肉营养丰富 ,风味浓郁 ,色泽鲜艳 ,深受消费者喜爱 ,市场前景广阔。本文从熟熏兔肉生产工艺确定、物料衡算、设备设计与选型几个方面 ,对熟熏兔肉整条生产线进行了设计。设计出了一条投资少、成本低、运行稳定、低耗能、生产效率较高的小型熟熏兔肉连续式生产线。Cooked and smoked rabbit meat(CSRM) is nutritious,bright_coloured and welcomed popularly by costomes.It has rich fragrance and abroad market prospect.A whole small_scale manufacture line of CSRM,which is of lower investment and cost,steady work and higher production efficiency,was designed in aspects such as technology of production,measurement of material goods,selection and design of facilities.The line is suitable for small_scale meat product manufacturing to apply and disseminate.
