摘  要:研究了野菊绿色素的最佳提取条件、基本性质及其稳定性。结果表明.以85%~90%的乙醇为浸提剂.料液比( g: mL)在 1: 50~ l: 70,于 3~ 40 ℃下漫提 24 h效果最好.其绿色素粗品产率高达 26%以上。该色素易溶于乙醚、乙醇、丙酮和碱溶液.对自然光、热、氧化剂和还原剂都比较稳定、耐糖性和耐盐性都很好.是一种很有开发应用价值的野生天然色素资源。This paper deals with the best extracting conditions, basic properties and stability of green pigment from mother chrysanthemum. The results showed that at 30 ~ 40 ℃. raw materials from mother chrysanthemum and 85% ~ 90% ethanol in proportion as l: 50 ~ 1: 70 (g/mL). extraction for 24h were optimal conditions. The average extraction rate was higher than 26%. The pignlent is soluble in ether. ethanol. acetone and alkali. It is stable to natural light. heat. oxidant and reductant. Tile sugar-tolerant and salt-tolerant are very good. The wild natural pigment is valuable for developing and using.
