摘 要:对太原市居民常食八大类蔬菜中的硝酸盐含量及其分布作了详细研究 ,结果表明 :硝酸盐在不同蔬菜中的积累顺序为 :绿叶菜类 >根菜类 >白菜类 >豆类 >葱蒜类 >茄果类 >瓜类 >薯芋类。硝酸盐在蔬菜中的分布规律为 :根 >茎 >叶柄 >叶片。并以 ADI值为基础 ,作了健康影响评价。结果表明 ,太原市居民常食的大部分蔬菜均受到硝酸盐一定程度的污染 ,有些蔬菜如萝卜、芹菜污染较为严重 ,食用不当 。The content and distribution of nitrate in 8 catalogues of Vegetables available in Taiyuan market were studied by ion chromatography.It was shown that the accumulation of nitrate in varied vegetable samples conformed to the following order:leaf vegetables>root vegetables>cabbages>legumes>scallions>egg plants>gourds>yam.The levels of nitrate in various vegetable tissues were found different,i.e.roots>stems>petioles>leaves.The influence of nitrate on health has been studied based on the ADI value.It was shown that most of the vegetables available in Taiyuan market had been polluted by nitrate to some certain extent.Some species such as radish and celery had been contaminated badly.It will be harmful to health if we eat them improperly.
