摘  要:为探讨北半球高纬度地区2种野生蓝莓,即笃斯越桔和欧洲越桔的体外抗氧化活性及花色苷组成,以中、欧两地收集的野生浆果果实为原料进行提取、纯化,得到提取物冻干粉,分别测定了其花色苷含量、多酚类物质含量、清除DPPH自由基能力及总还原能力,并对其主要活性成分花色苷的组成进行了UPLC-MS分析及含量比较。结果表明:花色苷为笃斯越桔和欧洲越桔提取物中多酚类物质的主要成分,2种提取物30%乙醇洗脱物均有较好的还原能力,可有效清除DPPH自由基;共鉴定出花色苷16种,其中欧洲越桔含有15种,笃斯越桔含有14种,欧洲越桔提取物以矢车菊素类花色苷占比较大,含量最多的为矢车菊素-3-半乳糖苷,其次为矢车菊素-3-葡萄糖苷,而笃斯越桔提取物以飞燕草素类花色苷占比较大,含量最多的为飞燕草素-3-葡萄糖苷。In order to explore the antioxidant activity and anthocyanin composition of two berry extracts from high latitudes of the northern hemisphere, Vaccinium uliginosum Linn. from China and Vaccinium myrtillus Linn. from Finland were collected, extracted, purified and tested. The results showed that anthocyanins were the main components of polyphenols in the extracts. Two 30% ethanol elution products of extracts had better reduction ability, and DPPH free radicals were effectively scavenged. 16 kinds of anthocyanins were identified from the two extracts. Among them, 15 were found in V. myrtillus L. and 14 were found in V. uliginosum L. The proportion of cyanidin in V. myrtillus L. extracts is larger than others, the most content is cyanidin-3-galactoside, followed by cyanidin-3-glucoside, and delphinidin in V. uliginosum L. is larger than others, and the most content is delphinidin-3- glucoside.
