摘　　要：环境条件对小麦蛋白质有重要影响 ,环境间的小麦蛋白质变异往往超过品种变异。国内外大量研究结果表明 ,温度、水分、土壤因素等是影响小麦蛋白质的重要因素 ,环境综合因素的影响造成了小麦籽粒蛋白质明显的地域差异。The environment conditions have important effects on wheat protein.It is suggested that the difference of wheat protein is greater in environments than in varieties. A lot of research results summarized confirm that temperature, water, soil are important factors on wheat protein. The regional difference of wheat protein is caused by the comprehensive actions of environment and ecological conditions.
