摘　　要：单宁是一类自然界中广泛存在的多元酚化合物,具有结构多样性和生物活性,在制革、医药卫生、化妆品、食品工业、农业等方面具有重要的应用价值,作为天然产物,具有不可估量的开发利用价值,对其研究非常重要。本文就长期以来单宁提取方法和应用方面的研究做了较为全面细致的综述,希望为单宁研究者提供一些有价值的参考。Tannin is a kind of polyhydric phenol compounds which is widely distributed in nature and has varieties of chemical compositions and physiological functions. It is a natural product of great value in its development and utilization due to tannin＇s widely application in the fields of medical, cosmetics, food industry, agriculture, tanning and so on. So the research work of tannin is of particularly importance. This article summarizes the extraction methods and application of tannin based on the research results for a long time, as well as the prospects of extraction methods and aoolication.
