摘 要:通过分别测定不同饥饿时间后藏系绵羊肌肉的AMPK活性,糖酵解指标以及肌肉品质指标,分析饥饿应激对宰后AMPK活性及藏系绵羊肉品品质的影响,初步探明饥饿应激与AMPK活性及肌肉品质的关系,为提高肉品品质提供理论基础。结果表明:短期的饥饿应激(不超过24h)对宰后藏系绵羊肌肉的AMPK活性以及肌肉的品质没有显著的影响,而长期的饥饿应激(超过48 h)可以使宰后藏系绵羊肌肉的AMPK活性升高,ACC和GS活性下降,糖原含量下降,乳酸含量升高,pH值下降,熟肉率和滴水损失下降,剪切力上升。结果提示长时间的饥饿应激(超过48 h)可以通过提高AMPK活性,加快糖酵解的速度,使宰后藏系绵羊肌肉的糖原含量下降,乳酸含量升高,pH值降低,而较低的pH值,对藏系绵羊的肌肉品质有很大的影响。To analysis hunger stress on AMPK activity and Tibetan sheep muscle quality after slaughter, the AMPK activity, glycolysis indi- cators and muscle quality indicators in Tibetan sheep after different starvation time were measured for theoretical foundation to improve meat quality. The results showed that short-term hunger stress had no significant influence to AMPK activity and muscle quality in Tibetan sheep af- ter slaughter, but long-term hunger stress to Tibetan sheep could make increases of the AMPK activity, decreases of the ACC and GS activity, decreases of glycogen contents, increases of LD contents, decreases of the pH value, decreases of cooked meat rate and drip loss, increases of the shearing force. Long-term hunger stress could make the decrease of glycogen levels and increases of lactic acid contents, and the lower pH of Tibetan sheep meat. While, the lower pH value had a great influence on the quality of the muscle.
