摘  要:目的建立食品中柠檬黄、胭脂红和日落黄3种合成色素铝色淀的HPLC含量测定方法。方法用0.5%硫酸溶液浸泡提取食品中的色淀,净化浓缩后,采用C18反相柱以甲醇和乙酸铵为流动相,梯度洗脱。结果目标化合物在0.001 mg/ml^0.2 mg/ml范围内呈良好线性关系,相关系数均>0.999,定量限(LOQ)均为0.5 mg/kg。色淀加样回收率良好,添加浓度为10 mg/kg、50 mg/kg、100 mg/kg时回收率在94%~116%之间,RSD在1.5%~3.7%之间。结论建立的样品处理方法简单易行,液相色谱测定方法灵敏度高、重复性好,为食品中的食用色淀含量测定提供有效的检测方法。Objective To develop a method for simultaneous determination of,lemon yellow,carminum,and sunset yellow- 3kinds of aluminum lakes by High PerformanceLiquid Chromatography( HPLC) in foods. Methods Lakes in foods were extracted by 0. 5% sulfuric acid solution,separated by gradient elution with methanol and acetic ammonium as mobile phase.Results The linearity range of pigments were 0. 001 mg /ml ~ 0. 2 mg /ml with correlation coefficients greater than 0. 999. The quantification limits of the method were 0. 5 mg /kg. Recoveries of lakes at three concentration levels ranged was from 94% ~116% with relative standard deviations between 1. 5% ~ 3. 7%. Conclusion This method is simple,sensitive,accurate,reproducible,and can be used to control the quality of edible lakes in foods.
