摘  要:为研究扬州鹅及其杂交配套组合肌肉组织学性状对肉品质的影响,以70日龄扬州鹅(A×A)及其4个杂交配套组合(K×B、K×A、C×A和S×A)为研究对象,检测不同群体扬州鹅胸肌、腿肌的肌纤维结构和肌肉剪切力。结果表明:5个群体中,无论公母鹅,胸肌肌纤维面积、肌纤维直径极显著小于腿肌;K×B群体的肌肉组织形状(肌纤维面积、肌纤维直径、A带、H带、I带和肌节长度)在5个群体的公、母鹅中具有显著的优越性,同时肌肉嫩度也显著优于其他群体。综合而言,不同群体组织之间虽然存在显著或极显著差异,但K×B群体的组织学特性相对优于其他4个群体,在5个鹅群体中肉品质最好。This research study The slaughtering performance and meat quality were systematically investigated in this study. 70-day-old Yangzhou geese (AX A) and its 4 different crossbred combinations (KX B, KX A, CX A and SX A) were used as the objects to systematically study the muscle fiber structure and muscle shear force of chest muscle and leg muscle. The results showed that: Regardless of the male and female, chest area of muscle fiber, diameter of muscle fiber was significantly less than the leg muscle in 5 groups (P〈0. 01) ; The muscular histological characteristics of the group K X B (area of muscle fiber, diameter of muscle fiber, A belt, H, I and the sarcomere length) had significant advantages in male goose and goose of five groups, at the same time, muscle tenderness, was also the best. In summary, although dif- ferent groups had significant or extremely significant differences (P〈0. 05 or P〈0. 01), the muscular histological char- acteristics of group KX B was relatively better than the other four groups and was the best in meat quality of the five goose groups.
