摘 要:大米营养均衡,食用品质优良,是人类生活最基本的主食之一。我国食用大米人口众多,约有2/3以上的人以大米为主食,年消耗大米约1.25亿吨,商品大米市场很大,其加工质量的好坏直接影响其商品价值。从大米加工精度、碎米含量、糠粉含量、杂质含量及产品包装等方面论述如何提高商品大米的加工质量。选择科学加工工艺与设备,加强大米加工现场质量管理,严格遵守操作规程,各个环节紧密配合,确保检验数据科学全面有代表性,才能使商品大米符合精度等级要求,确保去皮均匀,表面光洁,含碎适宜,含杂、含石、含糠不超标,符合食品安全卫生标准,并依据消费群体需要采用适宜的内外包装形式,使商品大米更加多样化,满足不同消费市场需求,适应不同层次消费群体需要,努力做到企业与消费者都满意,达到提高大米商品价值,增加企业经济效益的目的。Rice has edible quality and balanced nutrition, so that it is one of the most basic staples of human life. In China, a large population(about 2/3 of the people) live on rice, with a consumption about 1.25 billion tons rice per year. Therefore, commercial rice has a big market, and its quality has a direct influence on its commercial value. In this paper, the author focus on how to improve the quality of rice with respect of the processing accuracy, and the amount of broken rice, bran powder impurity, and product packaging. In order to make the rice reach the standard precision grade, we must choose scientific processing technology and equipment, improve quality management of rice processing, follow all the standard operation procedure, work closely with all aspects, and ensure scientific and comprehensive data. Secondly, to meet the health and safety standards of food, the rice must be peeled evenly and surface finish, with the total amount of the impurity, little stone and bran powder all lower than the standard. Additionally, proper inside and outside packing cases are selected for different consumers, making the rice a more diversification to meet various kinds of needs from different levels of markets and consumers. When both enterprise and consumer are satisfied, the commercial of the rice will be improved greatly not only, but also the economic benefits of enterprise will be increased.
