摘  要:测定了10种稀特蔬菜食用部位硝酸盐和5种重金属元素(Pb、Cd、As、Hg、Cr)的含量,并进行了污染和健康风险评价。结果表明,不同稀特蔬菜对硝酸盐的富集能力存在差异,其中红苋、绿苋、薄荷、蒲公英、野菊、景天三七和婆罗门参硝酸盐含量达重度污染级;稀特蔬菜对重金属元素富集能力由大到小依次为Pb>Cr>As>Cd>Hg,其中红苋和绿苋重金属含量达轻度污染级,稀特蔬菜的重金属暴露风险指数均小于1,食用后不会引起健康风险。Taking 10 kinds of special rare vegetables as research objects, the contents of nitrate and 5 kinds of heavy metals (Pb, Cd, As, Hg and Cr) in the edible parts were determined, and the pollution and health risk assessment were also conducted. The results showed that different special rare vegetables had different accumulation abilities to nitrate. Among them, the nitrate contents of Amaranthus tricolor, Amaranthus viridis ,Mentha haplocalyx, Taraxacum mongolicum, Dendranthema indicum, Sedum aizoon and Tragopogon porrifolius reached high pollution level. The order of accumulation ability of special rare vegetables to heavy metals was Pb 〉 Cr 〉 As 〉 Cd 〉 Hg. Amaranthus tricolor and Amaranthus viridis were mildly polluted by heavy metals. The exposed risk indexes of special rare vegetables to heavy metals were all less than 1, so the consumption of special vegetables would not cause health risk.
