摘　　要：通过火腿猪肉罐头含水量递增实验,分析含水量检测指标,品评感官的可接受程度,给出合理的参考数据建议。Through increasing experiment of water content of canned chopped pork with ham,the detection index of water content was analyzed. The acceptable level of sense was sized up and reasonable reference data suggest was provided.
