摘  要:介绍了"瘦肉精"的相关概念及其危害,并从感官辨别和实验室检测两方面描述"瘦肉精"的残留检测方法,重点阐述了胶体金免疫层析技术、酶联免疫吸附技术、高效液相色谱法和气相色谱-质谱联用法4种常用"瘦肉精"检测方法的基本原理、检测步骤和技术特点,最后汇综了监管建议。The concept and hazard of clenbuterol were introduced, and the detection methods of clenbuterol residue were described in terms of sensory evaluation and laboratory testing. The basic principle, detection process and characteristics of colloidal gold immunochromatography assay(GICA), enzyme-linked immunosorbent assay(ELISA), high performance liquid chromatography(HPLC)and gas chromatography-mass spectrometry(GC-MS) were emphasized. Finally,some suggestions for the supervision of clenbuterol were put forward.
