摘　　要：槲皮素作为自然界分布最为广泛且无明显毒副作用的植物源性黄酮类化合物,具有多种生理作用,包括抗氧化、抗炎、抗菌抗病毒以及调节免疫功能等。文章就槲皮素的结构、生理功能及其在鸡生产中的应用作一综述。As a plant-derived flavonoid compound that has the most extensive distribution in nature and no obvious side effects, quercetin has a variety of physiological activities, including antioxidation, anti-inflammatory, antibacteria and antivira, immunoregulation and so on.The physiological effects of quercetin and its application in chicken production are reviewed in this article.
