摘　　要：高启安教授的《唐五代敦煌饮食文化研究》是新世纪敦煌研究的重要著作,也是饮食文化研究中的扛鼎之作。其对唐五代敦煌饮食文化的深入研究和探讨,不仅使敦煌学生活层面的研究更加深入,对饮食文化研究的领域而言,也拓展了一个重要方向,在举世瞩目的敦煌学领域里突出饮食文化研究的元素,使得饮食文化显示出巨大的兼容性。＂Studies on Catering Culture important works on new century Dunhuang in the Tang Dynasty and the Five Dynasties＂ by GAO Qi-an is an studies as well as a renowned works in catering cultural research. The research on catering culture in the Tang Dynasty and the Five Dynasties gives rise to a more in-depth research into people＇s life level in Dunhuang Studies as well as development of an important direction for catering cultural studies.The research of this kind hi Dunhuang Studies and makes great ghlights the element of catering cultural research in the most striking field of compatibility exposed from catering culture
