摘　　要：域外豆类蔬菜包括长豇豆、扁豆、刀豆、豌豆、藜豆、菜豆和多花菜豆七种。陕西方志中对域外豆类蔬菜的最初记载在明代就已经出现(多花菜豆除外)。以原产域外的豆类蔬菜在陕西的起源、传播为研究对象,依据明清及民国方志中有关域外豆类蔬菜的记载来梳理明代以来域外豆类蔬菜在陕西的传播及影响。域外豆类蔬菜的种植不仅丰富了陕西地区农作物种类,丰富了传统的陕西美食,还促进了该地区农业的发展。Exotic legumes inculde aparagus bean ,lentils,sword bean,pea,quinoa beans,kidney beans and spend beans.The original records of exotic legumes except spend beans in local chronicles of Shanxi were in the Ming Dynasty .Taking the origins and dissemination of exotic legumes as research objects , according to records in local chronicles of Shanxi from Ming Dynasty , this paper combs the effects and transmission of exotic legumes .The planting of exotic legumes in Shanxi province not only enriched the crop species and traditional Shanxi cuisine , also promoted the development of local agriculture .
