摘 要:本试验研究了绿洲灌区规模养猪D×LY三元杂交和PD×LY四元杂交商品猪的生长发育性能、胴体特性、肉质性状及背最长肌氨基酸、脂肪酸含量。结果表明:在60-160日龄生长发育阶段,PD×LY猪的平均日增重比D×LY猪高7.39%(P<0.01),料肉比低7.42%(P<0.01),屠宰率高2.68%(P>0.05),眼肌面积、后腿比例和瘦肉率分别高22.7%、11.02%、8.03%(P<0.05),背膘厚低6.50%(P>0.05)。D×LY猪的肌肉大理石纹评分,肌内脂肪含量和熟肉率分别较PD×LY猪高14.15%、21.50%、5.77%(P<0.05),失水率、肌纤维直径、剪切力分别低17.62%、10.04%、12.04%(P<0.05)。两组合猪背最长肌所含17种氨基酸中,同一种氨基酸含量、氨基酸总量、鲜味氨基酸含量和必需氨基酸含量差异均不显著(P>0.05)。D×LY猪棕榈酸、硬脂酸、油酸、蛋白质、干物质的含量较高,其中油酸含量差异显著(P<0.05),其它指标差异不显著(P>0.05);亚油酸含量PD×LY猪显著高于D×LY猪(P<0.05)。In this study,the growth and development performance,ketone body,meat quality traits and the content of amino acid and fatty acid in longissimus muscle of scale pig Oasis Irrigation D × LY ternary hybrid pigs and PD × LY four element cross pigs in Oasis Irrigation were researched.The results showed that,in the growth and development stage of 60~160days,the average daily gain,slaughter rate,loin eye area,legs and lean proportions of PD × LY pig were 7.39%(P〈 0.01),2.68%(P〉 0.05),22.7%,11.02%,8.03%,respectively higher than D × LY pig,and The feed conversion rate,backfat thickness were 7.42%(P0.01),6.50%(P0.05)lower than D × LY pigs.The marbling scores,intramuscular fat content and cooking percentage of D × LY pig were 14.15%,21.50% and 5.77% higher than that of PD×LY pig,the rate of water loss,muscle fiber diameter,shear force of D × LY pig were 17.62%,10.04%,12.04%lower than PD×LY pig.There were no significant difference in the content of same amino acid,total amino acids,essential amino acids and delicious amino acids of the 17 kinds of amino acids that in the longissimus muscle of these two pig breeds(P0.05).Palmitic acid,stearic acid,oleic acid,protein and the content of dry matter in D×LY pig were higher than that of PD×LY pig and the difference was not significant except oleic acid(P0.05).The linoleic content of PD × LY pig was significantly higher than that of D × LY pigs(P0.05).
