摘 要:高产反刍动物的饲粮含有大量快速发酵的谷物籽实,给瘤胃健康造成一定危害。对谷物籽实进行处理,降低瘤胃淀粉的发酵速率,提高过瘤胃淀粉含量,可以改善谷物籽实的利用效率与反刍动物的生产性能。本文介绍谷物籽实的组织学特征、淀粉的组成与特性,探讨化学处理提高谷物籽实过瘤胃淀粉含量的研究进展,分析淀粉消化位点转移的营养作用,为高产反刍动物瘤胃酸中毒的预防提供参考。The diet of high-producing ruminants concludes high amounts of rapidly fermentable cereal grains, which will endanger rumen health to some extent. The grain processing, aimed at the decrease of starch fermentation rate as well as the increase of rumen bypass starch content, may improve the utilization efficiency of grains and the production performance of ruminants. This review attempted to present the histological feature of grains and the molecular structure and characteristic of starch, to investigate the research progress on enhancing rumen bypass starch content by the chemical processing of grains, to analyze the nutritional significant of the transfer of site of starch digestion, ultimately to provide reference for the prevention of ruminal acidosis in highproducing ruminants.
