摘 要:综述猴头菇的营养价值、活性成分及保健功能,主要包括抗溃疡和炎症,增强免疫力,抗肿瘤,降血糖,降血脂,抗氧化,抗衰老,抑菌,保肝,抗辐射,抗突变,提高机体耐缺氧,抗疲劳等作用。概述猴头菇在医药保健和食品方面的开发利用情况,指出猴头菇制品主要有猴头菇药品,猴头菇罐头,猴头菇脯,猴头菇酱,猴头菇保健饮料,猴头菇保健酸奶,猴头菇保健酒,猴头菇保健醋,猴头菇袋泡茶。The nutritional value and health value of the active ingredient of Hericium erinaceus are reviewed, including anti-ulcer and anti-inflammation, enhancing immunity, anti-tumor effect, lowering blood sugar, lowering blood pressure, anti-oxidation, anti-aging effects, anti-bacterial, hepatoprotection, anti-radiation, anti-mutagenic, and improving the ability of anti-hypoxic, and anti-fatigue effect. And a brief overview of health care and food development and utilization situation of H. erinaceus have also been summarized. The products of H. erinaceus mainly include medicines, canned, preserved sauce, health drinks, health yogurt, wine, vinegar, and teabag.
