燕窝中亚硝酸盐快速检测技术及高灵敏试剂盒的研制

摘　　要：设计开发了一种亚硝酸盐快速检测试剂盒,并建立一种利用该试剂盒检测燕窝中亚硝酸盐含量的便捷方法。该方法采用大孔树脂富集亚硝酸盐后,再应用改进型格里斯(Griess)比色法对燕窝中的亚硝酸盐含量进行快速准确的测定。通过观察样品的色阶,与标准比色卡比较,判断亚硝酸盐含量。该试剂盒灵敏度、准确度高,快速,简便,价廉,亚硝酸盐最低检测浓度可达0.1 mg/kg,可用于各类燕窝制品及火腿、罐头、腌制品中亚硝酸盐含量的快速检测。We designed and developed a rapid detection kit for nitrite content, and established a convenient method for ni- trite content by the detection kit in edible bird＇s nest. After enriching the nitrite by maeroporous resin, then using modified Griess method to determine the content of nitrite in edible bird＇s nest by colorimetric method. By observed the difference be- tween the color gradation of sample in colorimetric tube and that of the standard colorimetric card, the content of nitrite in edible bird＇s nest could be determined. The detection kit in this work have high sensitivity, accuracy, rapidness, simplicity and cheapness, the lowest detection of nitrite concentration could take up to 0.1 mg/kg, which can be applied to the content detection of nitrite in various commercial products, for example, bird＇s nest, ham, canned food, pickled products, etc.
