摘 要:采用质构仪、x-射线衍射仪(XRD)、差示扫描量热仪(DSC)及原子力显微镜(AFM)分别研究了β-谷甾醇和γ-谷维素键合物对液态油脂的硬度、油脂晶型、融化性质和表面形貌的影响。结果表明,当油脂中饱和脂肪质量分数为30%-50%时,β-谷甾醇和γ-谷维素的键合物提供的硬度相当于2.2-2.8倍三硬脂酸甘油酯所提供的硬度;棕榈油含有8%的键合物时,出现了少量β晶型;25d储存期内,β’晶型向β晶型的日平均转变速率增加了0.1l%;DSC结果表明,添加键合物后,油相Tpeak升高7.37℃,Tend不变,△H降低了4.12J/g:原子力显微镜图片显示棕榈油的晶体形态变得更加均匀细小.网络结构得以增强。The effect of melting properties and surface bonding mixture ofβ - sitosterol and γ - oryzanol on the hardness, polymorphism, topography of lipid oil were determined by texture analyzer, X - ray diffraction, differ- ential scanning calorimetry (DSC) and atomic force microscopy ( AFM), respectively. The data showed that the hard- ness provided by bonding mixture of β - sitosterol and γ - oryzanol was equal to 2.2 to 2.8 times than that of tristear- in when the saturate fat content was 30% to 50%. The addition of 8% bonding mixture in palm oil resulted in a few of 13 form crystal appearing, and the daily average transition rate from β' to β form increased 0.11% during 25 days storage.
