摘  要:对中国北方黑龙江省、吉林省、内蒙古3省50种大豆主栽品种进行检测分析,分别测定了蛋白质、脂肪、植酸、总异黄酮和胰蛋白酶抑制剂的含量。通过分析不同省份大豆品种各项指标平均含量得出:黑龙江省大豆蛋白质、植酸、总黄酮平均含量最高,脂肪氧化酶含量最低;吉林省大豆脂肪平均含量最高,蛋白质、总黄酮含量最低;内蒙古大豆脂肪氧化酶平均含量最高,脂肪、植酸含量最低。对不同省份之间大豆品种各项指标平均含量进行差异性分析得出:各省份脂肪、脂肪氧化酶平均含量差异显著或极显著,蛋白质、植酸含量差异显著或不显著,总黄酮含量差异不显著。各省大豆品种之间相关性分析结果表明:蛋白含量、脂肪含量、总黄酮含量和脂肪氧化酶含量之间两两呈负相关关系,植酸含量与蛋白质含量、总黄酮含量呈正相关关系,与脂肪含量、脂肪氧化酶含量呈负相关关系。Totally 50 kinds of soybean varieties in three provinces including Heilongjiang,Jilin and Mongdia in northern China were detected and analyzed,protein content,fat,phytic acid,total isoflavones and trypsin inhibitor were defermined. By analyzing the average content of soybean varieties in different provinces,results shoued that soybean protein,phytic acid,the total flavonoids in Heilongjiang provinee was the highest,and the coutent of fat was lowest. The average content of fat in soybean in Jilin province was the highest,the content of protein and flavonoids was lowest. The averge content of fatty oxidase in soybean in Inner Mongolia was the highest,the fat and phyfic acid was the lowest. Soybean lipoxygenase highest average levels of fat,low phytic acid content. Difference between the analysis results of the average content of the indicators of soybean varieties in different provinces in Inner Mongolia showed that between protein content,fat content,total flavonoid content and fat oxidation enzyme levels were negatively correlated pairwise relations,phytic acid content and protein content,total flavonoid content was positively correlated with fat content,fat oxidation enzyme content was negatively correlated..
