摘  要:优质的生鲜乳是奶业发展的必然方向,而生鲜乳中乳脂率、乳蛋白率、菌落总数和体细胞数是衡量优质乳的核心指标,这些指标既关系到质量安全与消费者的健康,又决定着牛奶的经济价值与核心竞争力,其中乳脂肪和乳蛋白的含量与组成是牛奶营养品质的主要物质基础,菌落总数是环境卫生指标,体细胞数是奶牛健康状况指标。近年来,国内外牛奶质量安全事件频发,严重威胁人类健康。笔者通过对生鲜乳的检测技术的文献研究,提出相应的建议,这对提高生鲜乳质量安全以及保证人们的身体健康和生命安全具有十分重要的意义。High-quality fresh milk is the inevitable direction of developing dairy industry, while butterfat rate, milk protein rate, the total number of colonies and the number of somatic cells in fresh milk are the core indicators of measuring high-quality milk. It involves both the quality and safety and the health of consumers, and decides the economic value and the core competitiveness of milk. The milk fat and milk protein content and composition are the main material basis of milk nutrition quality and the total number of colonies is an indicator of environmental health and the number of somatic cells is the cow health indicator. In recent years, milk quality security incidents at home and abroad occur frequently, posing a serious threat to human health. In this paper, based on the literature research of testing technology of the fresh milk, the corresponding proposal is put forward to improve the quality and safety of fresh milk and ensure people's health and life safety.
