摘 要:本文调查了上海地区主栽鲜食葡萄品种巨峰、巨玫瑰、醉金香、夏黑、申丰、申玉、申华和沪培1号的果实发育特性和果皮花青苷积累过程。结果表明:夏黑于2014年7月31日完全成熟,其他葡萄品种在此之前处于生长高峰期,主要表现在单果质量和可溶性固形物迅速增加、果实硬度和可滴定酸呈递减状态。红色葡萄的花青苷含量随着果实成熟逐渐增多,其中不同品种之间锦葵素变化趋势类同,而矢车菊素差异显著。由上可知,夏黑属于早熟品种,对于其他葡萄品种来说,2014年7月31日是果实初熟的临界时间点;红色葡萄果皮颜色不是由单一物质主导变化的,是由几类花青苷共同调节的。Fruit development characteristics and peel cyanine glycosides accumulation from eight table grapes, Kyoho, Jumeigui, Zuijinxiang, Summer Black, Shenfeng, Shenhua and Hupei 1# were investigated in Shanghai area. The results showed that Summer Black presented full ripe in July 31, 2014, other varieties grew well and rapidly before the time; the content of soluble sugar and single berry weight were increased, the content of titratable acid and berry hardness were decreased with the growth of grapes; the malvidin of red table grape had the similar change trends, however, the cornflower showed significant difference. From above, Summer Black was belong to the early maturity variety. for other grape varieties, July 31, 2014 was the critical point of berry developmnet. The color of red grape peel was not dominated by a single material change, it was adjusted by several types cyanine.
