摘 要:通过对防霉杀菌剂和表面活性剂等系统的研究和筛选,开发出安全型果蔬防霉抑菌清洗剂。采用以盐酸聚六亚甲基双胍为主要杀菌因子的新一代果蔬消毒洗涤剂与现有产品相比具有明显的优势,试验结果证明,A配方果蔬防霉抑菌清洗剂对三种真菌的抑制效果最佳。样品经37℃下存放90 d,有效成分盐酸聚六亚甲基双胍下降率均小于1.5%。盐酸聚六亚甲基双胍为主成分的果蔬防霉抑菌清洗剂具有杀菌效果可靠、环保、稳定性好和使用方便等优点,产品可在水果蔬菜和食品加工过程的消毒清洗中推荐使用。In order to develop novel and more safe preservative and antimicrobial detergent for fresh fruits and vegetables,antimicrobial agent and surface active agent system were investigated. Comparing with the other products, the newantimicrobial detergent for fresh fruits and vegetables had obvious advantages by using polyhexamethylenebiguanidehydrochloride as the main germicidal factor. The A-formula had the best inhibition effect on three kinds of fungi. After thesamples kept at 37℃ for 90 days, the content of polyhexamethylenebiguanide hydrochloride was decreased by 1.5%. Theantimicrobial detergent containing polyhexamethylenebiguanide hydrochloride had advantages of reliable antimicrobialperformance, environment friendliness, good stability and easy handling. The product could be recommended aspreservative and antimicrobial detergent in the process of fruit-vegetable and food processing.
