摘　　要：试验随机选择了3只6月龄酉州乌羊的公羔羊,屠宰后采集肌肉样品,测定肌肉中的营养成分。结果表明:酉州乌羊的羔羊肉中EAA/TAA为40.67%,EAA/NEAA为68.58%,高于FAO/WHO的模式标准,显示酉州乌羊肉是优质蛋白来源;棕榈酸、硬脂酸和油酸的含量分别是0.22%、0.23%和0.36%;钙、镁、磷、锌、铁、铜、锰、硒的含量分别是67.30、180.67、1923.33、28.00、14.37、0.88、0.16、0.06mg/kg。酉州乌羊的羔羊肉中含有丰富的氨基酸、脂肪酸和矿物质元素等,具有丰富的营养价值。Three of 6-month-old Youzhou black goat male kids were randomly selected, and then they were slaughtered to measure the nutrient content in muscle. The results showed that： （1） Content of amino acid was above the module level of FAO/WHO,which indicated that the Youzhou black goat was among the best source of protein. （2） The content of palmitie acid, stearic acid and oleic acid was 0.22%, 0.23% and 0.22%, respectively. （3） Calcium, magnesium, phosphorus, zinc, iron, copper, manganese, selenium content were 67.30%, 180.67%, 1923.33%, 28.00%, 14.37%, 0.88%, 0.16%, 0.88%. The results showed that the Youzhou black goat contained rich amino acids, fatty acids and mineral elements, and then determined that Youzhou black goat had rich nutritional value.
