摘 要:[目的]实现普洱茶加工过程柔性生产系统,提供更加完的善理论依据,继续完善普洱茶自动发酵罐的第二代和第三代的改造研制工作。[方法]就Ⅱ型普洱茶发酵罐的关键部件进行了改正设计,并用改正后的发酵罐进行批量普洱茶发酵试验。[结果]改正后的Ⅱ型发酵罐,设计结构合理,环境内发酵普洱茶较传统发酵升温快,发酵周期短,品质相对稳定。[结论]研究得到相关的试验参数,可为普洱茶发酵的清洁化和规模化生产提供相应的科学依据。[Objective] To realize flexible production system in processing of Pu'er tea, provide a more complete theoretical basis, continue to improve the second and the third generation of transformation work of Pu'er tea's fermentation tanks. [ Method] The correct design of the key components of typeH Pu'er tea's fermentation tanks was conducted, the corrected fermentation tanks were adopted to conduct fermentation test for Pu'er tea. [ Result] The new tanks have reasonable structure. After vast experiments, comparing with the traditional one, the new method can heat up faster, has shorter fermentation period and the quality is relatively stable. [ Conclusion] The related parameters provide corresponding scientific basis for Pu'er tea fermentation's clean large-scale production.
