摘 要:以50%的无水乙醇作为提取剂,在单因素实验的基础上利用正交实验优化了超声波提取紫薇花色素工艺条件。实验结果表明:当超声功率为400 W、料液比为1:35 g/m L、超声波温度60℃、时间20 min时紫薇花色素提取液的最大吸光度为0.6682。紫薇花色素稳定性实验研究结果表明:紫薇花色素见光易分解,稳定不高,易受金属离子Fe2+,Ca2+,Cu2+的影响生成络合物,因此在使用过程中应避免直接接触。但一般食品添加剂葡萄糖、蔗糖、食盐、对色素无太大影响,实验测得紫色素的色价为E1%1cm(571.4)=22.17,色价相对较高,可作为天然食品添加剂。With 50% ethanol as extraction agent, on the basis of single factor experiment, orthogonal experimental design was used to optimize the ultrasonic extraction process conditions of crape myrtle flower pigment. The optimum process parameters were obtained as follows: ultrasonic power 400W, solid to liquid ratio 1:35 g/mL, ultrasonic temperature 60℃, the time 20 minutes, the crape myrtle flower pigment extract maximum absorbance 0.6682. Crape myrtle flower pigment stability experiment results show that the crape myrtle flower pigment easily decomposes in the light, and its stability is low. In addition, metal ion Fe^2+, Ca^2+ and Cu^2+ have effect on the stability of pigment. Therefore, the crape myrtle flower pigment in the use process should avoid contact with the light and metal ions. Common food additives including glucose, sucrose and salt have feeble effect on the pigment. Determined purple pigment color value is E^1% 1cm(571.4) =22.17 ,and the color value is relatively high, so it can be used as a natural food additive.
