摘　　要：溴酸钾是我国近期规定禁用的一种面粉添加剂。主要用于面包生产的溴酸钾,就是一个从曾经广泛使用到严格限制,直至被逐渐禁止使用的例子。本文综述了溴酸钾的用途和危害,介绍了用碘滴定法(AACC48-42)、阴离子交换-电化学检测法检测溴酸钾的方法,侧重介绍了溴酸钾的替代品及其发展前景。potassium bromate is our country recent regulation to disable a flour additive. Mainly used for potassium bromate, bread production is a from used widely to strict limits, until they are gradually to ban the use of examples. This article summarizes the use of potassium bromate and harm, this paper introduces the use of iodine titration method （AACC48-42）, anion exchange- electrochemical test detection of potassium bromate method, focusing on the substitute of potassium bromate were introduced and its development prospect.
