餐饮企业应对“用工荒”的调查研究——以四川旅游学院实习餐饮企业为例

摘　　要：文章运用访谈法和问卷调查法对实习餐饮企业的用工荒情况进行了调查研究,并将餐饮企业分为三个类型:处于正发展中的餐饮企业、高速发展期的餐饮企业和已经历高速发展期的餐饮企业,分析了用工荒的原因,最后提出了餐饮企业管理者要转变思想、挖掘餐饮服务的内涵、招聘文化程度不高的中年女性等策略。This paper conducts interviews and questionnaire surveys of labor shortage in the catering businesses for students＇ probationary training of Siehuan Tourism University. The businesses are classified into three groups： beginning, developing and developed. Reasons for the problems are discussed before corresponding strategies are suggested ： transformation of the management＇s mindsets, additional value of service, and employment of middle aged women with a low level of education.
