摘  要:以早熟品种西州密25号哈密瓜、中熟品种西州密17号哈密瓜、晚熟品种伽师瓜果实为材料,研究不同成熟期甜瓜采后贮藏过程中生理及品质的变化。将甜瓜果实采后放置于室温(25±2)℃、相对湿度80%-85%条件下,定期取样测定:呼吸速率、乙烯释放量、失重率、可溶性固形物含量、维生素C含量、可滴定酸含量、硬度、相对电导率、丙二醛含量。结果表明,早熟品种西州密25号哈密瓜果实呼吸高峰较西州密17号和伽师瓜提前3d出现;乙烯释放量高峰较西州密17号和伽师瓜分别提前3d和6d出现;相对电导率、丙二醛含量上升速度快;硬度、失重率、可溶性固形物含量、维生素C含量、可滴定酸含量等品质指标下降较快。西州密17号哈密瓜果实和伽师瓜随贮藏时间的延长生理及品质指标均优于西州密25号。The early maturing variety"Xizhoumi No.25"Hami melon,medium maturity variety"Xizhoumi No.17"Hami melon and late-maturing variety "Jashi"Muskmelon fruit were applied as materials to study the changes of physiology and quality of postharvest melon fruit in different maturing period during process of storage.These three kinds of melon were stored at room temperature(25±2)℃and RH 80%-85%,the samples were taken and determined regularly:such as respiration rate,ethylene release,weightloss rate,soluble solids content,vitamin C content,TA content,titratable acid(TA)content,firmness relative conductivity,firmness,and MDA content were measured.The results showed that the respiration peak of"Xizhoumi No.25"Hami melon appeard 3days ahead of time earlier than that of"Xizhoumi No.17"Hami melon;The release ethylene happed 3days and 6days ahead of time earlier than that of"Xizhoumi No.17"Hami melon and ahead 6days of time earlier than"Jashi"Muskmelon melon fruit respectively.The rise of relative conductivity,MDA content increased rapidly,firmness,weight-loss rate,soluble solids content,vitamin C content,TA content etc quality indexes dropped fast.While physiology and quality indicators"Xizhoumi No.17"Hami melon and"Jashi"Muskmelon fruit were better than those of"Xizhoumi No.25"Hami melon with the extension of storage time.
