摘　　要：木瓜是热带和亚热带地区的水果,具有较高的营养价值和药用价值。其含有丰富的糖类、黄酮类、萜类化合物,还含有β-胡萝卜素、有机酸和木瓜蛋白酶等营养物质,具有护肝、抗炎镇痛、抗肿瘤、抗菌和抗氧化等作用,成为药食兼用水果中的一员。木瓜果实、叶、籽均具有药用、食用价值,木瓜加工产业具有巨大的经济价值,但目前我国木瓜主要作为水果鲜食,副产品较少,产品附加值低,传统产品主要有木瓜果汁、木瓜果酱、木瓜果醋、木瓜果脯等,木瓜副产品加工主要集中在番木瓜籽榨油及果皮中果胶、木瓜蛋白酶的提取等方面。从木瓜的化学成分、药理作用以及加工应用等方面进行了综述,以期为木瓜在医药和食品领域中的广泛应用提供依据。Papaya is a kind of typical tropical and subtropical fruits, has high nutritional value and medicinal value. Papaya is rich in sugars, flavonoids, terpenoids, also contains beta-carotene, organic acid ahd papain, due to the presence of these substances, papaya has effects of protecting liver, anti-inflammatory, antitumor, antimicrobial and antioxidant, so Papaya becomes one member of the medicine combination food fruits. Papaya＇s fruit, leaf, seed have medicinal and edible value, its processing industry has great economic value, but in China it is a fruit for fresh edible with little by-products and low value-added products. The main products are traditional Papaya juice, papaya fruit jam, Papaya fruit vinegar, preserved Papaya fruit, etc. Papaya by-products processing mainly concentrates in extraction of Papaya seed oil, peel pectin and papain, etc. This paper introduced the chemical composition and pharmacological action of Papaya, summarized its current situation and tendency of processing utilization in such industries as food. So Papaya has comprehensive utility in such industries as medicine and food.
