摘　　要：维生素C是评价果蔬产品质量的重要的客观参数之一。综述了果蔬中维生素C测定的方法 ,分析了不同方法的特点和适用性 ,为测定维生素C选择合适的分析方法提供了思路和借鉴。Vitamin C is one of the most important quality parameters in fresh,stored and preserved fruits and vegetables This paper reviews methods that could be used in the determination of Vitamin C,including ascorbic acid (AsA) and dehydrogen ascorbic acid (DAsA) The advantage and suitability among the methods were analyzed
