摘 要:以苹果皮为原料,采用微波法及单因素试验,黄酮类化合物提取率为考察指标,优选其最佳提取工艺;并以Trolox作为参照,对提取化合物进行抗氧化性实验研究.结果表明:最佳提取工艺条件是溶剂60%乙醇,料液比1∶5(g/m L),微波功率390 w,提取时间2 min,黄酮类化合物的提取率可达2.50%.且苹果皮渣黄酮类化合物对GO·的清除率随其浓度的增大而增大,最大清除率达到25.2%,说明目标物质对机体内自由基有较好的清除能力.In the paper,the extraction conditions of flavonoids in apple peels were optimized based on microwave method and single factor experiment. The antioxidant abilities of flavonoids were also studied by using Trolox as the reference. The results showed that the extraction efficiency of flavonoids can reach 2. 50% under the optimum extraction conditions( solid-to-liquid ratio 1: 5,concertration ethanol 60%,microwave power 390 W,extraction time 2 min). The clearance rate of flavonoids extracted from apple peels toward GO· was increased as the concentration of flavonoids was increased. Moreover,the maximum clearance rate was up to 25. 2 %,indicating that the flavonoids extracted from apple peels have potential clearance ability toward radicals in human bodies.
