摘 要:目的:比较分析不同产地六神曲质量。方法:采用麦芽低聚糖酶活力为质量评价指标,比较不同产地六神曲生品、炒制品麦芽低聚糖酶活力,同时进行聚类分析。结果:六神曲各产地麦芽低聚糖酶活力有较大差异,其中生品六神曲中活力最高为广西(509.25±7.30)U·g^(-1)、最低为四川2(37.99±0.59)U·g-1,相同产地生品与炒制品比较中河北1生品(406.97±2.20)U·g^(-1),炒制后活力明显下降(P<0.01),为(97.19±3.99)U·g^(-1)。结论:不同产地六神曲麦芽低聚糖酶活力均有差异,同一产地六神曲生品麦芽低聚糖酶活力大于炒制品,麦芽低聚糖酶活力可作为六神曲质量评价的指标,根据聚类分析可对不同产地六神曲质量进行分级分类。Objective:To compare and analyze the Liushenqu quality of different origin.Methods:Using malt oligosaccharide enzyme activity for the quality evaluation,different origin Liushenqu raw products,fried products maltooligosaccharides enzyme activity compared,and the data were applied by cluster analysis.Results:The maltooligosaccharides enzyme activities of Liushenqu origins were quite different,in which raw products in Guangxi vitality Liushenqu was the highest (509.25 ± 7.30) U·g^-1the lowest in Sichuan 2 (37.99 ± 0.59) U·g^-1.From the same origin,the enzyme activity of raw product of Hebei 1 (406.97 ± 2.20) U·g^-1was significantly higher than that of fried product (97.19 ± 3.99 U) ·g^-1.Conclusion:Liushenqu maltooligosaccharide enzyme activity of different origins were different,the same origin raw products Liushenqu maltooligosaccharide enzyme activity greater than fried products.maltooligosaccharide enzyme activity could be used to evaluate the quality of Liushenqu.
