摘　　要：甘薯的产后加工直接关系到其生产效益与综合利用价值的实现。中国甘薯加工产业正处于转型升级加快发展阶段。全面分析了中国甘薯加工的市场需求、甘薯加工企业、甘薯产区与加工产业区域分布、产业结构等,阐述了甘薯淀粉加工产业、甘薯休闲食品加工产业和甘薯乙醇加工产业的发展现状,并对其未来发展趋势予以了展望。Sweet potato post-production processing is directly related to the realization of the production benefit and comprehensive utilization value of sweet potato. China＇s sweet potato processing industry is in an accelerated development stage of transformation and upgrading. The authors comprehensively analyzed the market demand of sweet potato post-production processing, sweet potato processing enterprises, regional distribution of production and processing of sweet potato, structure of sweet potato industry and so on in China. And the authors also expounded the development situation of sweet potato starch processing industry, sweet potato snack food processing industry and sweet potato ethanol processing industry, and prospected their development trend in the future.
