摘  要:[目的]研究火炭母95%乙醇提取物的抗氧化活性及其稳定性。[方法]采用室温浸提法对火炭母中有效成分进行提取,考察其对1,1-二苯基-2-三硝基苯肼(DPPH·)、羟基自由基(OH·)、总抗氧化能力(ABTS法)、超氧阴离子(O2-·)的清除作用,并与VC进行比较,以评价其抗氧化活性以及p H和温度对提取物稳定性的影响。[结果]火炭母95%乙醇提取物对DPPH·的清除率可达92.5%。提取物对DPPH·、OH·、ABTS+·、O2-·的半数抑制浓度(IC50)分别为32.8、90.8、110.8、277.1μg/m L,清除能力均比VC强,且提取物还具有较好的耐热性和耐弱酸弱碱性。[结论]火炭母95%乙醇提取物具有较强的抗氧化活性及良好的稳定性。[Objective] To research the antioxidant activity and stability of 95% ethanol extracts from Polygonum chinense Linn.[Method]The effective components were extracted from P.chinense at room temperature by extraction method.Its scavenging effects on DPPH·,OH·,ABTS method and O2-· were researched.Vc was compared in order to evaluate the antioxidant activity.Effects of p H and temperature on the extracts stability were studied.[Result] Scavenging rate of 95% ethanol extracts to DPPH· reached 92.5%.The IC50 of extracts to DPPH·,OH·,ABTS+· and O2-· were 32.8,90.8,110.8 and 277.1 μg/m L,respectively.Their scavenging abilities were all stronger than VC;and extracts had relatively better heat resistance,weak acid and alkali resistance.[Conclusion]95% ethanol extracts from P.chinense have relatively strong antioxidant activity and good stability.
