摘 要:目的:研究模拟胃环境下香椿子多酚清除亚硝酸盐条件及初步动力学。方法:在单因素实验基础上选取不同因素与水平,根据中心组合实验设计,采用响应面分析法,确定影响清除率因子;对香椿子多酚与茶多酚清除动力学曲线进行数学模型拟合。结果:所得响应面优化清除条件为胃蛋白酶浓度3.75 mg/m L,反应时间107.03 min,多酚浓度0.58 mg/m L,此时清除率为93.23%;香椿子多酚与茶多酚清除动力学曲线符合Logistic模型及零级动力学方程。结论:香椿子多酚在模拟胃环境下对亚硝酸盐具有较高清除作用,为下一步开发应用香椿子多酚提供理论基础。Objective: To study on the Nitrites scavenging conditions of polyphenols from seeds of toona sinensis by Response Surface Method and its Preliminary kinetics under simulating acid environment of stomach. Methods: Based on the single factor experiment, the different factors and levels were selected, and response surface analysis method was used to determine the impact factor on the scavenging by Box-Benhnken design. Mathematical models were studied fitting for removal kinetics curve of polyphenols from seeds of toona sinensis and tea. Results: Design expert analysis indicated that the optimal processing conditions were: pepsin concentration of 2.05 mg/mL, reaction time of 11.903 min, polyphenols concentration of 0.55 mg/mL, and the scavenging rate was 96.23%. The scavenging kinetic curve of polyphenols from seeds of toona sinensis and tea conforms logistic model and zero order kinetics equation. Polyphenols from seeds of toona sinensis have a higher scavenging effect on nitrite under simulating acid environment of stomach. Conclusions: The study can be provided theoretical basis for the development and application of polyphenols from seeds of toona sinensis.
