摘　　要：植物甾醇是植物中存在的一大类化学物质的总称,包括植物甾醇和植物甾烷醇。植物甾醇的化学结构与胆固醇相似,对脂代谢具有调节作用。本文对植物甾醇/植物甾烷醇降血脂、预防动脉粥样硬化等心血管疾病研究进展及其应用现状进行综述。Phytosterol is a kind of chemical substances in plant foods including phytosterol and phytostanol. Its chemical structure is similar to cholesterol and can regulate lipid metabolism. This paper reviewed the research and application progress of phytosterol on lowing blood lipids,preventing athrosclerosis and reducing the risk of cardiovascular diseases.
