摘 要:利用反相高效液相色谱法测定苹果中的糖含量,针对糖的特殊结构,调整高效液相色谱法的测试条件,获得了适于苹果中糖含量的测试方法。色谱条件:ODS柱,RI检测器,柱温25℃,进样体积10μL,流动相为3∶97的甲醇-水体系,流速1 m L/min,等度洗脱。在选定的检测条件下,可分析出苹果中5种主要的糖,果糖、葡萄糖、蔗糖、阿拉伯糖和D-木糖;在对市场上国光、富士、红玉、黄金4种不同的苹果进行检测时发现各品种间糖成分差异不大。Reversed-phase high performance liquid chromatography was used to analyze sugars in apples, in light of the characteristics of sugars, the adjusted high performance liquid chromatography technique was em- ployed to analyze sugars. The chromatographic conditions: octadecylsilyl column , refractive index detector, col- umn temperature at 25 ℃, injection volume was 10 μL, a mobile phase was Vmethanol : Vwater=3 : 97 ,flowing rate was 1 mL/min, isocratic elution. Five main sugars in apples were detected under the selected conditions: fructose, glucose, sucrose, arabinose and D-xylose;sugar compositions were found little difference among the varieties of Guoguang, Fushi, Hongyu and Huangjin bought on the market.
