摘 要:[目的]探讨厌氧处理对桑叶中γ-氨基丁酸(GABA)含量的影响,为桑叶中功能性成分的开发利用提供参考。[方法]分别采用CO2厌氧和真空厌氧处理桑叶鲜叶,经杀青、烘干和粉碎后,利用丙酮和Al Cl3去除桑叶色素,分光光度法测定桑叶中GABA的含量。[结果]未厌氧处理的桑叶中GABA含量为0.915 mg/g;而CO2厌氧处理4 h,GABA含量达到最高值1.214 mg/g;真空厌氧处理8 h,GABA含量达到最高值1.453 mg/g。[结论]一定时间的CO2厌氧或真空厌氧处理均能显著提高桑叶中GABA含量,真空厌氧处理可得到更高GABA含量的桑叶。Objective To research the effects of anaerobic treatment on GABA content in mulberry leaves, and to provide references for the de-velopment and utilization of functional components in mulberry leaves.[Method] Fresh leaves of mulberry were processed by CO2 anaerobic treatment and vacuum anaerobic treatment.After mulberry leaves were fixed, dried and shattered, acetone and AlCl3 were used to eliminate the pigments effectively.GABA content in mulberry leaves was detected by spectrophotometry method.[Result] GABA content in mulberry leaves without anaerobic treatment was 0.915 mg/g;while after CO2 anaerobic treatment for 4 h, GABA content reached the maximum value of 1.214 mg/g.After vacuum anaerobic treatment for 8 h, GABA content reached the maximum value of 1.453 mg/g.[Conclusion] CO2 anaerobic treat-ment and vacuum anaerobic treatment in a given time can both significantly enhance the GABA content in mulberry leaves .And vacuum anaero-bic treatment make a GABA content more than CO2 anaerobic treatment..
