摘 要:目的通过调查"海洋量子"号邮轮食品生产及消费全过程,寻找导致其群体性腹泻事件发生的可能原因,进一步提出预防性控制措施。方法彻查该邮轮食品采购、储存、制备、消费等各个环节,发现存在的问题。结果该邮轮食品储存、制备环节存在问题,生制食品消毒及防止交叉污染环节存在缺陷,可能为系统性偏差。结论邮轮方需加强对生制食品消毒环节的重视,需要进行全面整改,以防止相关问题的再次发生。Objective To detect the possible reasons of mass diarrhea events by investigating the whole process of food production and consumption in the cruise of "QUANTUM of the SEAS",in order to provide preventive control measures. Methods To find out defects that need to be corrected by investigating all the aspects of food procurement,storage,preparation and consumption in the cruise. Results There were some defects on food storage and preparation in the cruise. Problems during the procedure of fresh food disinfection and food cross-contamination prevention were found,which might be systematic deviation. Conclusion The cruise management should pay special attention on disinfection of fresh food,and take comprehensive corrective actions,in order to prevent related defects from recurring.
