摘  要:本文研究了自发气调(MA)贮藏对‘黄金梨’(Pyrus pyrofolia Nakia Var.Whangkeumbae)果实生理特性的影响。结果表明:MA贮藏影响‘黄金梨’果实贮藏过程中可溶性固形物含量、呼吸速率、乙烯释放量、脂氧合酶(LOX)活性、相对电导率、硬度、POD酶活性、CAT酶活性及MDA含量的变化,进而影响果实贮藏品质。与对照相比,采用MA贮藏的‘黄金梨’果实,在贮藏期间可溶性固形物含量增加幅度小,呼吸速率处于相对较低的状态,乙烯释放高峰和LOX酶活性高峰出现的时间明显延迟,果实的相对电导率、POD酶活性、CAT酶活性及MDA含量均较低,并维持了较高的果实硬度,从而最大程度的保持了果实品质。The influence of modify atmosphere (MA) storage on the physical characteristics of 'Whangkeumbae~ pear (Pyrus pyrofolia Nakia Far. Whangkeumbae) during storage were determined. The results showed that MA affected the content of soluble solids and MDA, firmness, respiration rate, climacteric peak of ethylene production, activities of POD, CAT, LOX and storage quality. Compared with control, the fruits stored in MA appeared lower increase in soluble solids and the respiration rates. The climacteric of ethylene and the peak of LOX activities were delayed in MA. The relative electric con- ductivity POD and CAT activities, and MDA content were lower, and the fruit firmness was higher in pear fruits stored in MA than that in control.
