摘　　要：N-酰基氨基酸表面活性剂是一类具有高表面活性,良好的生物相容性的新型温和表面活性剂,具有非常广阔的市场前景。本文综述了N-酰基氨基酸表面活性剂的制备方法,主要可以分为直接法和间接法,并对两类方法进行了分析和总结。介绍了N-酰基氨基酸表面活性剂在日化领域、生物医药领域、食品领域和工业领域的应用,并展望了氨基酸表面活性剂的进一步开发和应用的方向。N-acylamino acids surfactants was a new type of mild surfactant with high surface activities and good biocompatibility, and its market prospect was wide. The preparations of N-acylamino acids surfactants were summarized, there were mainly direct method and the indirect method, and the two kinds of methods were analyzed and summarized. The application of N-acylamino acids surfactants in daily chemical field, biomedicine field, food field and industry field was introduced, and the further development and application of N-acylamino acids surfactants were proposed.
