摘  要:为了解内蒙古西部地区原料奶品质,分析不同季节对原料奶质量的影响,对内蒙古西部地区的奶罐奶进行了调查研究,于2013~2015年的每个季度采集10批次奶罐奶,比较分析了乳脂率、乳蛋白率、体细胞数及菌落总数的变化规律。调查显示,季节对乳脂率影响比较大,乳脂率最低值出现在第二季度,最高值却不完全相同。季节对乳蛋白率的影响没有明显规律;菌落总数与体细胞数随季节而变化,即在天气较热的第三季度比较高,其他季度较低;与乳脂率、乳蛋白率和菌落总数比较,体细胞数对生鲜乳质量的分级影响最大。结果表明,内蒙古西部地区生鲜乳质量较好,季节对乳脂率、体细胞数和菌落总数有明显的影响。In order to understand the quality of raw milk in the western region of Inner Mongolia Province, and the influence of seasons on the quality of raw milk, this experiment collected 10 batches of raw milk of dairy farms in each quarter during 2013~2015 in the western region of Inner Mongolia, and detected some parameters in raw milk, such as milk fat, milk protein, somatic cell count and colony count. The results showed that milk fat rate was impacted largely by season, the minimum value of milk fat rate was in the second quarter, but the maximum value was not exactly the same. There was no obvious effect of the seasons on milk protein rate. The change of the colony count was similar to that of somatic cells count with seasonal variation, that is, the colony count and somatic cells count were relatively higher in the third quarter with the hot weather, and were lower in the other three quarters. Somatic cell count had a relatively larger influence on the quality grade of raw milk. The quality of raw milk was good in the western region of Inner Mongolia, and there was obvious effect of the seasons on milk fat rate, somatic cell count and colony count.
