摘 要:目的了解铁路伙食团就餐场所卫生设施及微小气候的基本情况,为铁路伙食团卫生安全管理提供依据。方法利用对不同地区进行随机抽样调查的方法 ,按照《餐饮服务食品安全操作规范》对伙食团就餐场所卫生设施要求进行逐项确认,依据《饭馆(餐厅)卫生标准》(GB16153-1996)对伙食团就餐场所微小气候进行评定。结果卫生设施总体合格率为58%,其中,防鼠、防蝇设施合格率为88%,其中洗手设施合格率为32%,洗碗设施合格率为24%。微小气候总体合格率为77%,其中,采光、照明、一氧化碳合格率达到或超过80%;而二氧化碳、噪声和甲醛的合格率不足80%。结论不同地区就餐场所卫生设施建设存在差距,卫生清洗设施还有待提高,外环境、个人习惯及装修情况共同影响微小气候的合格率。Objective To Provide evidence for improving sanitation condition of restaurants in a certain railway group. Methods 100 restaurants were randomly collected in 5 cities, Tianjin, Tangshan, Qinhuangdao, Cangzhou and Dezhou within Tianjin Railway Group. In these food group sampled, sanitation facilities in the restaurants sampled were tested according to Food Service Food Safety Operation Specification, and their tiny climate were tested according to Restaurant Hygiese Standards(GB 161453-1996). Re- sults The qualified rate about the sanitation facilities of the restaurants were 58% in general. It was 88% in ratproof and flyproof facilities, 32% in hand washing ones and 24% in dinnerware washing ones. The general qualified rate about the tiny climate of the restaurants was 77%. It was equal or upper to 80% in holding natural, artificial light and carbon monoxide concentration, while less than 80% in the concentration of carbon dioxiede and formaldehyde. Conclusion There was difference in sanitation facilities of restanurants in different regions. Hand and dinnerware washing facilities need to be improved. Personal habit and indoor decoration would influence the qualified rate of tiny climate in the restaurants.
