摘 要:为研究发酵中草药作为抗生素替代品对肉鸡屠宰性能和肉品质的影响,以817肉鸡(以下简称为肉鸡)为试验对象,采用单因素随机分组,将480只肉鸡随机分为16组,分别进行30、36、42和48 d的饲养试验。结果显示:发酵中草药对肉鸡屠宰性能、滴水损失、蒸煮损失、水分含量和剪切力无明显影响,但对肉鸡成活率以及脂肪、蛋白、肌苷酸和鸟苷酸的含量有积极影响。其中鸡胸肌肌苷酸和鸟苷酸的含量随着日龄增加呈先上升后下降趋势。试验表明,发酵中草药代替抗生素作为饲料添加剂对肉鸡屠宰性能无显著影响,但对肉品质有积极影响,可在大规模饲养中应用。To study the feeects of fermental Chinese Herbal medicine instead of antibiotics. On slaughter performance and meat quality of broilers,480 817 broilers (hereinafter referred to as broiler) were divided into 16 groups randomly, for 30-day-age,36-day-age,42-day-age and 48-day-age feeding trial respectively. The results showed that fermental Chinese herbal medicine had no effects on slaughter performance, drop loss, cooking loss, moisture content and shear force. However,there were positive effects on survival rate and the content of fat,protein,IMP and GMP, The content of IMP and GMP in breast muscle of broilers increased firstly then decreased with age.The results showed that antibiotics were instead of fermental Chinese herbal medicine as feed additives could have no significant effect on slaughter performance of broilers, but has a positive impact on meat quality,which could be used in large-scale feeding in future.
