摘　　要：许多研究结果表明,水果损失主要集中在采摘、包装、保存等环节,达到近三分之一,其中一个重要的原因为不同成熟度的水果相互混杂。因而,区分水果的成熟度并进行筛选加工处理,对于提升水果等级、改善水果品质有重要意义。本文应用MATLAB图像处理技术对香蕉成熟度进行检测,系统通过摄像头拍取图片或者在给定的图片中分割出香蕉图片,然后对香蕉图片进行二值化和滤波等分析处理,最后依据香蕉的色素组成检测出不同成熟度的香蕉。This paper is a study of image processing for the detection of banana maturity by MATLAB.Segmentation of banana picture system through camera to take pictures or a given picture,then the value of the two filtering and higher resolution images of banana , finallydetect the pigment composition of different maturity of bananas, the detection part completedautomatically by the system, the final conclusion to the maturity of the show.
