摘  要:目的:研究超临界CO2与乙醇结合工艺提取蛋黄油,并建立其质量控制方法。方法:分别采用TLC法鉴别蛋黄油中β谷甾醇和卵磷脂成分;HPLCELSD法测定蛋黄油中磷脂酰胆碱的含量;紫外-可见分光光度法对蛋黄油中总磷量进行测定。结果:超临界CO2与乙醇结合工艺制备的蛋黄油性状稳定;TLC均能检测出蛋黄油中β-谷甾醇和卵磷脂的特征斑点;HPLC-ELSD法精密度、重现性良好,磷脂酰胆碱在50.49~400.72μg/mL范围内均有较好的线性关系,平均加样回收率为97.68%,RSD为1.75%;紫外-可见分光光度法测得的线性关系良好,平均回收率为100.63%,RSD为2.67%。结论:该方法操作简单,工艺良好,为建立和完善蛋黄油质量标准提供参考依据。Objective:To study the preparation of egg yolk oil by supercritical CO2 and ethanol extraction process, and to establish the quality control method. Methods: TLC identification method of yolk oil beta sitosterol and lecithin ingredients; HPLC ELSD method for the determination of content of phosphatidylcholine from egg yolk oil; ultraviolet visible speetropbotometry was used to determine the amount of total phosphorus in egg yolk oil. Results: Supercritieal CO2 and ethanol binding process in the preparation of egg yolk oil steady state stability is good; TLC could be detected in all the characteristic spots of eggs in butter beta sitosterol and lecithin; HPLC-ELSD method precision, reproduce well, phosphatidyl choline in 50.49 to 400.72μg/mL are a good linear relation- ship, with the average recovery rate was 97.68 %, RSD was 1.75% ; ultraviolet visible spectrophotometry measuring the linear rela- tionship was good. The average recovery rate for 100.63 %, RSD 2. 67%. Conclusion:To provide reference for establishing and improving the quality standard of egg yolk oil.
